Veggie Sandwich: Lots of lettuce, cucumber, avocado, mashed cannellini beans, sweet onion and pea shoots with a dash of sea salt and a squeeze of lemon on toasted sprouted grain bread. If you really must have turkey or other meat on a sandwich, consider loading it up with lots of veggies to get a serving or two of vegetables into what would ordinarily be a veggie-less meal.
